Are weight conversions accurate for any ingredient?
Pure weight units (g ↔ oz ↔ lb) are exact. Volume → weight depends on the ingredient — flour, sugar, and water all have different densities. For baking, prefer grams from a kitchen scale.

How is gas mark mapped to °F / °C?
Gas mark 1 = 275°F / 135°C, mark 4 = 350°F / 177°C, mark 9 = 475°F / 246°C. Values between marks are linearly interpolated.

Why are cups 236 mL, not 250 mL?
We use the US legal cup of 236.59 mL. The metric cup (250 mL) is used in Australia / NZ; convert via 1 metric cup = 250 mL if your recipe specifies it.
